One of the best tips Amy has for anyone who’s looking to improve their health and wellbeing is to boost your veggie intake any way you can. “Start slowly, by replacing the processed foods in your diet with fresh vegetables,” she says. “It might be in the form of a veggie juice or a smoothie at breakfast.”
- “Leftovers are my go-to! At dinner time, if you over-prepare and cook a few too many roast vegetables, you’ll be able to throw together a beautiful, hearty salad for lunch the next day.”
- “Boiling up 3 days’ worth of eggs is a really good, quick way to have on-the-go brekky or lunch for the week.”
- “A banana or apple dipped in 100% natural almond butter or crunchy peanut butter is my favourite afternoon tea.”
- “My all-time favourite tip for quick breakfasts and lunches is to mass-prepare bags of smoothie ingredients in ziplock bags and freeze them. Then all you need to do is whip one out of the freezer, throw it all in a blender with liquid and maybe a little yoghurt, and you’re done!”
