From the Field to Your Table
Many people don’t know the difference between ham and shoulder, but it’s simpler than you think: ham comes from the hind legs, yielding more meat, whereas the shoulder comes from the front leg with a more intense flavor and higher fat marbling. This particular shoulder is 75% Iberian, derived from pigs raised freely and fed on acorns in dehesas.
It has been cured for 30 months in natural dry rooms and bodegas that achieve that distinctive flavor with a perfect texture. Its origin could only be Guijuelo (Salamanca) and it boasts a uniform, balanced marbling with the infiltrated fat that contributes juiciness.
It weighs 5.5 kg and shipping is free both to home delivery and to pick-up points such as Supercor.
